In fact Aluminum is a very good conductor for electricity,
e.g. if in industry one builds huge electrolysers to make
Chlorine gas and Sodium Hydroxide, those Cells pulls
enormous amounts of amps, then they do not use copper for the wiring,
but laminated aluminum.( 6" alu bars instead of copper wires).
But there is a corrosion issue with alu,
to protect it you could of course paint it some way,
but we can't do that for a Joe Cell; an other option
is to anodize it, that means a factory added oxide layer;
and that would change the (electric-)surface properties,
and will interfere to much your Joe Cell application.
And backyard shed welding of alu isn't easy, and applying
that anodizing layer is also not simple for DIYers.
In short the surface properties of alu are not good for
the Joe Cell applications and Alu also can't be used
for Hydroxy electrolyzers run with Caustic electrolyte, because
that electrolyte will completely eat the alu for breakfast.
Copper will also after a wile form a green oxide layer
with different surface properties not so good for JC applications.
SS 316L is a noble metal ( alloy), you can almost compare it
with gold when it comes to corrosion resistance in humid environments.
Therefore it's the best for electrolysers and JCs.
